Ingredients:

  • 1 ½ cups water
  • ¾ cup erythritol or your favorite keto sweetener (like monk fruit or a blend of stevia and erythritol)
  • 1 tsp maple extract (for that authentic maple flavor)
  • ½ tsp xanthan gum (this thickens the syrup)
  • Pinch of salt (optional, to balance sweetness)
  • 1 tbsp butter or coconut oil (optional, for a richer flavor)

Instructions:

  1. Heat the Water and Sweetener: In a small saucepan, heat the water over medium heat. Add the erythritol (or other keto-friendly sweetener) and stir until fully dissolved. Bring the mixture to a light simmer.
  2. Add Maple Flavor: Once the sweetener is dissolved, add the maple extract. Stir it well to combine. This gives the syrup that delicious, sweet maple flavor!
  3. Thicken the Syrup: Slowly whisk in the xanthan gum. Be sure to add it gradually while stirring to prevent clumps. Continue to whisk until the syrup starts to thicken.
  4. Simmer & Adjust: Let the syrup simmer for about 3–5 minutes, stirring occasionally. If you’d like a richer flavor, you can add a tablespoon of butter or coconut oil at this stage.
  5. Cool and Store: Once it’s thickened to your liking, remove the syrup from heat. Let it cool down slightly before pouring it into a jar or bottle. The syrup will thicken more as it cools.
  6. Store in the fridge: Keep your keto maple syrup in the refrigerator, where it will last for up to 2 weeks.

Tips:

  • Thicker syrup: If you prefer a thicker consistency, you can add a little more xanthan gum. Be cautious, though, as adding too much can make the syrup too thick.
